Our maple syrup season has ended. We tapped our tree on Feb 22, which was a month later than normal. This winter in Massachusetts was consistently below 38° which is not ideal for sap flow.
We harvested 28 liters of sap which after boiling down, gave us a little over a pint of syrup. This really drives home why it’s so expensive!
Sap Totals:
2025 February 22 - March 23 = 28 liters
2024 February 1 - March 17 = 30 liters
2023 January 22 - March 12 = 36 liters
@danmccullough not expensive; why it costs so much. Expensive means the quality/added value vs price ratio is not to your liking. Why it costs so much is just a factual statement of how rare and labour intensive the ‘edible gold’ really is.

@danmccullough Used to do home maple taping,--we didn't get as much as you, but oh how fun it was. The scent of the sap boiling down!
@danmccullough I love maple syrup!
@danmccullough
Nice!
I just finished two batches, the second yesterday. Three big sugar mapletrees tapped. It ran well this year.
I managed to get six litres of syrup to add to the cold storage and several jars to give to neighbours and family.
I will collect a little more sap before I shut it down, so I can have some sweetwater in the fridge to drink instead of coffee over the next few days. lol, but the boildown is done.
@Rural_Canadian Wow that’s a good amount! Congrats! I’ve got hundreds of trees on my property, but only 1 Sugar Maple! Have some Reds and Birches but haven’t really ventured down that road.
@danmccullough
thanks. I only did three buckets this year. More gets a bit much for me.
I made a very small amount of birch syrup this year... like a half litre. Tasted great!
I heard about people tapping walnut trees for syrup. Didn't know it was a thing. I want to try that. Apprently it is more a 50:1 ratio for boiling than 40:1, so it sounds like more work. lol, and the walnut trees are few & spread out through the forest.... so it might not work for me.
Sounds interesting though.
@danmccullough
hehe
Yeah
am dropping 1/2pints on folks like they're (fucking) free
pressure canned
last long time
I -hand to godz- don't know why I do this, every, (fucking), year!
holding back a qt for us
&
doubtless, will add it to the compost late next winter
Love the stuff, sure
but a little goes a long way
@SallyStrange
@danmccullough
I gathered 15 gallons of sap, spwnt three days reducing it, and burned all of in the last 30 minutes....
@danmccullough a labor of sweet love
@danmccullough Now you have to decide who's maple syrup worthy!
I was looking at the weather thinking the season was probably done.
@westerling I think the trees have moved on to bigger and better things.
As it should be!
